KOHLRABI AND ENOKI MUSHROOMS SALAD
SUMMARY
Kohlrabi, also called German turnip and turnip cabbage, together with enoki mushrooms are nutritional powerhouses packed with minerals, nutrients and fiber. Give this delightful crunchy salad a try!
Ingredients (serves 3-4):
- 75 g (2.5 oz.) kohlrabi
- 37.5 g (1.25 oz.) enoki mushrooms
Seasonings:
- chili peppers
- minced ginger
- vinegar
- sesame oil
- salt
Instructions:
- Rinse kohlrabi and enoki mushrooms thoroughly and set aside.
- Peel and cut kohlrabi into long strips. Drain and tie enoki mushrooms into knots.
- Boil water in a pot and blanch the mushrooms for about 3 minutes. After blanching, rinse with cold water and set aside.
- Combine kohlrabi, mushrooms, chili peppers, minced ginger, vinegar, sesame oil, and salt in a larger container. Mix well and serve chilled.
